Scottish from farm to plate. We use only the finest salmon from Scottish Salmon Company (SSC) for our Harris & Lewis Smoked Scottish Salmon.
We hand-massage the exact amount of cure into each fresh `side` (fillet), ensuring that no Sea Salt, Demerara Sugar or water is wasted during the process.
We gently smoke each salmon ‘side’, using Scottish whisky cask chippings to infuse them with a rich flavour that’s evocative of these windswept isles.
Harris & Lewis is available in Retail Packs of 100g, Smoked Sides ~900g and packs of 1kg trimmings .
The best way to store your smoked salmon is on the bottom shelf of the fridge where it's the coldest. Unopened, it should remain fresh for weeks. Once opened, place in a zip-lock bag or keep in its original packaging and seal with clingfilm.

In comparison to average farmed salmon, our Salmon are fed with a diet that’s higher in Fish Meal and Fish Oil. This bespoke, higher-than-average diet means that our Salmon is naturally rich in Omega 3.

The health and welfare of our fish and the natural environment they live in are intrinsically linked and looking after them is fundamental to responsible salmon farming. We have a team of passionate and professional veterinarians and biologists who make the welfare of the stock under their care their utmost priority.
We are committed to maintaining the highest standards of animal husbandry in all of our operations – adhering to the independently-audited Code of Good Practice for Scottish Finfish Aquaculture.
As part of our focus on reducing the use of chemical and medical treatments, we have not used antibiotics in Marine for seven years. And in 2018, we invested over £6m to manage health challenges by using sustainable new treatment technologies and expanding our cleaner fish programme.
Quality, food safety & traceability
The Scottish Salmon Company holds national and international accreditations and certifications across the value chain. This includes:
- GLOBALG.A.P, the worldwide standard for Goof Aquaculture Practice
- The highest level of British Retail Consortium (BRC) Accreditation for food safety, processing and supply chain management
- 3-star Best Aquaculture Practice (BAP) certification for all Marine and Processing sites, as well as feed suppliers.
BAP is considered to be the world’s most trusted and comprehensive third-party Aquaculture certification and is the only certification to cover the entire Aquaculture production chain, from Hatcheries and Marine sites to Processing plants.
Our speciality feed suppliers are accredited to assurance schemes such as Universal Feed Assurance Scheme (UFAS), BAP and GLOBALG.A.P. They only source marine ingredients from fisheries and producers that have been certified by the International Fishmeal and Fish Oil Organisation (IFFO), under their Responsible Supply Scheme.
