The art of smoked salmon
100% Scottish Salmon
We use only the finest salmon from Scottish Salmon Company (SSC) Salmon for our Harris & Lewis Smoked Scottish Salmon. They are all filleted, hand-cured, gently smoked and packaged in Stornoway by our Artisanal Smokers, on the Isle of Lewis, to maintain unrivalled freshness.
The Restaurant is on the same premise as our Harris & Lewis Smokehouse. Our Artisanal Smokers hand cure, gently smoke in pebble lined kilns and package our Harris & Lewis Smoked Scottish Salmon – combining traditional methods and hand-crafted attention to detail with modern, state-of-the-art facilities and processes, to create what we believe to be the best smoked salmon in the world.
Scottish from farm to plate. We use only the finest salmon from Scottish Salmon Company (SSC) for our Harris & Lewis Smoked Scottish Salmon.
We hand-massage the exact amount of cure into each fresh `side` (fillet), ensuring that no Sea Salt, Demerara Sugar or water is wasted during the process.
We gently smoke each salmon ‘side’, using Scottish whisky cask chippings to infuse them with a rich flavour that’s evocative of these windswept isles.
Harris & Lewis Smoked Scottish Salmon is available in packs of 100g and 700-900g.
From our Artisanal Smokers to our passionate chefs and warm, welcoming staff, it’s easy to see why the wonderful people on the island – and all of the passion, warmth and pride that they exude – are our secret ingredient.
The Art of Smoked Salmon
Along with crafting our unique tasting smoked Scottish Salmon, the local surroundings are also of significant importance to us at the Harris & Lewis Smokehouse. To capture the spirit of Harris & Lewis we worked with the eminent artist Vega. Capturing the essence of the surrounding scenery through her artwork, Vega’s painting Wild Mangurstadh (Mangersta Bay, Isle of Lewis) Bay can be seen on the front of our smoked Scottish Salmon packaging. Which pays a tribute to the waters where our salmon are raised.
After years of travelling the world's continents working on her craft. Vega now resides on the Isle of Lewis where the breath-taking surroundings are the inspiration for the art on her canvases. As an avid sailor, Vega has travelled the very water where our salmons are raised linking her travels to our tail at the Harris & Lewis Smokehouse.
